Julia’s Diary: Breakfast & Banqueting at the Westin

At Charlie’s Change, we love sharing real stories from our Hearts-in-Action Education Fund. This week, Julia takes us behind the scenes as she learns just how intense a hotel kitchen can be — from breakfast rush to banqueting functions, it’s been a whole new world for her.


Dear Diary

I have been spinning around in the kitchen! I never knew it gets this intense and my body is so tired — having to be up extremely early, but what can I do? It’s the name of the game.

This week I’m working in Breakfast and Banqueting Cold (functions). We made some nice Prego steak (cooked steak cut into strips with some seasoning and sauces) — 44 sandwiches with a treat on the side!

I also prepared some cooked ham with Teriyaki sauce, like you see in the picture. But breakfast is not for the faint-hearted — people really do come to eat in the mornings! 😅 I suppose it’s not just a saying that breakfast is the most important meal of the day.

I’ve also noticed that there are specific ways fruit gets handled, from hygiene to how you even cut the fruit — so at least I know the importance of that now. It’s been a journey so far, but I’ve learned a thing or two about how kitchens really operate in hotels.
