Dear Diary: Fried Fish & Giant Blenders

Guess what?! I learnt how to make some really good fried fish! 😄

I didn’t think the chef would trust me with something as delicate as fish… but I nailed it.

I started by making the batter myself — flour, spices, baking powder, and some sparkling water. That bowl was huge — I think I gained some arm muscle just mixing it! 😂

Then I coated the fish lightly in flour, dipped it in the batter, and into a piping hot fryer it went. Golden, crispy, and not soggy (because I made sure the oil was HOT).

The chef and staff gave me compliments — and that really boosted my confidence. I’ve been enjoying this kitchen a lot. It feels like I’m finding my place, and honestly… the knife I got from Charlie’s has made a big difference. I feel like I can face anything now.

Also — in one of the photos, you’ll see me doing “the most” with an industrial blender. I took leftover tomato pieces (the insides and edges) and blended them with canned tomatoes to make a tomato soup base. No fancy extras — just keeping it simple. That’ll be used for spaghetti and mince sauce later.
